1 small tart apple, thinly sliced
2 ripe bananas, cut into 1/2 inch rounds
2 tbs maple syrup
1/2 tbs canola oil
1/2 cup whole wheat pastry flour (i'm sure you could use white flour; this magazine always calls for whole wheat)
1/2 cup rolled oats
pinch salt
1/4 tsp cinammon
1 1/2 tbs water
1/2 tsp vanilla
preheat oven to 200 degrees. in a small, lightly oiled casserole dish, toss apples and bananas with 1 tbs syrup.
in a med bowl, combine oil and flour. with fork or pastry blender, mix in rolled oats, salt, and cinnamon. add water and vanilla until moist but crumbly. sprinkle oat mixture over fruit and drizzle with remaining syrup.
cover and bake until soft, about 25 minutes. uncover and cook 10 more to crisp topping.
