Last summer, Mark Bitman (the Minimalist cook) published a list of 101 salad ideas which I keep meaning to crack into and keep not getting around to. Last night, we did number 7:

Grate carrots, toast some sunflower seeds, and toss with blueberries, olive oil, lemon juice and plenty of black pepper. Sweet, sour, crunchy, soft.

It was lime juice instead of lemon, because that's what we had. Organic carrots from the co-op, frozen blueberries (we are hitting the point in the year where I'm like, seasons be damned, I need vegetation.) Jeff's mom didn't say anything, Jeff didn't have any, I loved it.

That sounds tasty. As someone who hates lettuce, I'm always looking for salads that don't depend on a pile of lettuce.

That list of salads reminds me of a great veggie dish I had a couple of weeks ago. It was simply cubes of kohlrabi sauteed with some spinach, with a generous sprinkling of pepper. So simple, but I absolutely loved it.
