Grate carrots, toast some sunflower seeds, and toss with blueberries, olive oil, lemon juice and plenty of black pepper. Sweet, sour, crunchy, soft.
It was lime juice instead of lemon, because that's what we had. Organic carrots from the co-op, frozen blueberries (we are hitting the point in the year where I'm like, seasons be damned, I need vegetation.) Jeff's mom didn't say anything, Jeff didn't have any, I loved it.
