| So, this morning, Jeff's mom and I went out and did the Christmas grocery run (finally tally: I'm doing corn, mashed potatoes, gravy, rolls, cheese ball & crackers, vegetable tray & dip, and cheese enchiladas. She's doing deviled eggs and something involving jello, cottage cheese, and crushed pineapple). We came home and I managed to make the to-do list, and then we headed over to my parents' house. She hung out with my mom, while I ended up heading back into Greensboro with Hope for a quick doctor's appointment and the last of the Christmas shopping [for gifts that need to be deployed Thursday, that is]. We headed back to my parents' and then V. and I headed back home, and then Jeff and I headed out to check on the cats that we're cat-sitting for a friend this week. I made chicken and salad for dinner, we gamed (I'm still losing at Command and Conquer, but doing better), and now it's McCrashy time.
(At some point, I will have a day when I do not see the inside of a vehicle. This week is not that week. And that's okay. :) )
There aren't definite plans for tomorrow, but I'm hoping that it involves family sightings (one of my cousins from VA and her finance were supposed to get in tonight, and the aunt and uncle moving home from Colorado got in tonight), cleaning the kitchen, and cooking. |
Oh, I wonder if this is the "pink fruit salad" my mom makes rather often. It involves taking the cottage cheese, mixing it with whipped topping of your choice, then sprinkling in the dry Jell-O powder. Stir, add a bunch of fruit, nuts, and/or marshmallows if desired. Chill and serve. I adore it, personally. :)

Prepare the (in this case, lime) Jell-O normally per usual instructions. Add the pineapple and cottage cheese, stirring to mix thoroughly. Chill to set. Serve.
