So, I'd been wanting to make Farmgirl Fare's Blueberry Breakfast bars for awhile, but 1) I kept not getting around to it and 2) the recipe is nowhere near healthy. There's a total of 18 tablespoons of butter in them there bars. That's a lot of butter (and butter isn't cheap, either). So, in another entry, she links to this modified version, which while better, is still not terribly healthy either (though I'm sure it tastes great). So...



Bottom layer
2 cups oats
0.75 cup sugar
0.75 cup flour
0.25 teas baking soda
2 tbs butter
2 tbs vegetable oil
6 tbs applesauce

Top layer
½ cup flour
¼ cup sugar
2 tbs butter

Middle layer
About 4 cups fruit
1 teas lemon juice
¼ cup sugar
3 tbs flour
½ teas nutmeg


Verdict: quite the tasty.

I forgot the vanilla in the bottom layer, and they still taste fine. I don't have a 9x13 pan, so I used an 8x8 pan and a 7x9 pan (I have 7x9, 8x8, 11x14, and loaf pans. Go figure).

I used 1 very overripe peach, 2 apples, and about half a cup of dried cranberries. It wasn't quite enough fruit to go around, so I dug some frozen berries out of the freezer.

I think that next time, I'll try using no butter or oil in the bottom layer, and just using applesauce, or maybe an applesauce / banana mash. Also, I halved the top layer from the original, and there was still too much top layer. I could have gone half again, and will next time. (I did squirt a tablespoon or so of honey onto each pan before the went into the oven.) Heck, I might just skip the top layer next time. The streusel is tasty, but it would be fine without. Or, I could add a little milk and end up with a biscuity kind of topping.

I got 28 (small) bars out of the two pans. My calculations say that, as made this time, it was 3051 calories for the batch, or about 109 a bar. These will make snacks and breakfast supplements for the rest of the week, and I'll freeze what's left when either they look like they're ready to go off or we get tired of eating them, whichever comes first.
