1 1/2 cup boiling water
1 cup corn meal
1 egg
1 teaspoon lard (I used olive oil)
1 cup sour or buttermilk (I used normal milk and it was great)
1 teaspoon baking soda
3/4 teaspoon salt
Pour boiling water over corn meal and let cool. Add baking soda and salt. Beat egg, milk, and oil/lard together and mix into cornmeal mixture. It will be very liquidy. Grease an 8x8 baking dish and pour mixture in; bake at 350 for 15-25 minutes, or until top is lightly brown and slightly set to the touch. The finished dish will have the consistency of pudding. Eat topped with maple syrup if you're feeling indulgent, and try not to eat the whole pan yourself.
