Tonight's dinner is just perfect, absolutely what my body and taste buds wanted tonight: salad with ranch croutons and creamy ranch dressing, mixed organic greens, cucumber, tomato, leftover teriyaki chicken from last night, salad shrimp, feta cheese. The only way it would be more perfect is if I would finally get off my butt and start making my own salad dressing. So. Good.

Ahem. Sorry. Don't mind me; I'm going to be over in the corner, clutching my bowl of salad.

I swear I'm going to start compulsively scheduling salad night after chicken night, because it's so nice having cold, already cooked chicken for the salads.

I've started baking a pan of chicken at a time, despite feeding only one person. There are so many great things you can do with cold chicken. And on the south beach plan, I am doing all of them.

When can you start adding grapes again? One really, really good thing to do with cold chicken is chicken grape salad: mix cold turkey (cooked turkey breast works well too), halved grapes (red for color, but red or green, they work fine), roughly chopped cashews, poppy seeds if you eat them, and plain or vanilla yogurt (proportions to suit you, we tend not to eat it too saucy.) Apples work well too, if you can add them first. Cranberries or craisins would too; one day we'll get around to trying that. It makes a hearty lunch or a light dinner and it's so tasty.

... so I shouldn't talk about the honey tangerines that I was peeling for breakfast tomorrow that smelled so good, they filled up the whole kitchen?

If I'm going to be carrying them for a portable meal at school, yea, I prepeel and put into tupperware. Makes it easier to nosh at the beginning of a lecture without making a mess. :)

I love little salad shrimp. I get shrimp flavor for (relatively) cheap, and lean protein too. And since I never get enough protein...
