Dear Brain Trust,

It's a very long story, one that I will get into more detail about later tonight, but if you had a whole vegetable drawer full of cucumbers that needed eating or otherwise using, what would you do with them? "Make pickles" is not the right answer, here. :)

I think gazpacho uses cucumbers. I would be tempted to slice them up and eat them raw with rice vinegar or a creamy dipping sauce.

Mmm, I love gazpacho. I need to figure out which box the blender is in.

Alas, there are more than even our cucumber-loving household is going to eat raw.

Make one or both of these two (well, three) cucumber salads:

Cucumber and Feta Salad

Cucumber Salad in Two Grandmotherly Styles

Make a Gordon's Cup, a cocktail of cukes, limes, and gin. Or a nonalcoholic version, with club soda.

Make gazpacho.

My brain is having trouble sorting out the idea of gin, lime, and cukes together. We just might have to try that.

...we've actually made some pretty good bruschetta with cucumbers, white beans, olive oil, balsamic vinegar, and optionally tomato and pizza pepper. But that's not a lot of cucumber.

They go well on sandwiches like tomatoes do; they don't have a lot of flavor but they do add moisture and 'crunch'.

They go well in salads.

Amber suggests tzatziki. ISTR she once had a 'cucumber mojito' she liked too, but I didn't think it was so great.

What've you got against pickles, anyhow? :)

Oh, yeah! How could I forget sandwiches? I spent several hours one morning a few weekends ago making cucumber and cream cheese tea sandwiches. So yummy.

Absolutely; one of my favorite things about summer and a must for days that I feel the need to lounge on the couch with books and tea.

Thanks to the sandwich suggestions, I went to bed last night craving homemade baguettes, cream cheese, goat cheese, and cucumbers. :)

I'm with you! Although my usual plan is to slice them into sticks and dip in French dressing. Then chow down like they're freakin' potato chips or something!

Figure out a way to send them to California. :)

Cucumber sandwiches. Plain ones (bread, butter, cucumber) are great. Cream cheese and cucumber is always good. Add in some smoked salmon if you're in the mood (although it occurs to me that smoked salmon might not be something you can get locally there).

Cucumber soup. It's cucumber, yogurt, and sour cream well blended. Add in some fresh mint if you've got some. This is quick to throw together, but ideally needs to be done a few hours in advance to let the flavours meld.

Cold Asian pasta salads always do well with cucumber in them. I've got this one on my list to try out.

I'll throw diced cucumber in places where I might otherwise use diced celery: potato salad, egg salad, chicken salad, various pasta salads, etc.

And now I'm hungry, so I'm going to stop typing and go to the grocery store.

I think I definitely want to give the soup a go this week.

Alas, I would eat cold Asian pasta salad every day if I could, but the rest of the household is not as crazy about it. Lunches, though. :)

I saw something about a cucumber drink somewhere...I'd find it if I didn't need to make dinner myself now. :)

Brian won't eat cukes, so I'll never have this problem.

I know. I believe it has something to do with working at the pickle plant, but not entirely. His dad won't eat them either. It's funny watching them both with a garden salad at the same table...

I have some reason to believe fresh cucumber may be starting to disagree with me (as they do my father, who hardly ever ate them, even when he grew them), but I have so little opportunity to test that out. I can't eat much in one go at this point, so I don't usually buy much that Brian won't eat.

I love cucumbers so, so much, that honestly I'd just slice em up and salt 'em. :)

That aside, do you like tzatziki? With your recent yogurt makings, it seems like a natural progression to me! And...now I want some. :)

Other thoughts might be making a nice, light cucumber face spritz/astringent by mixing some cucumber "juice" with a little witch hazel.

Also, what about using some in some veggie sushi rolls. Cucumber, cream cheese avocado, and a little bit of wasabi. Mmmmm! :)

cucumber salad: cucumbers, ginger, garlic, siracha (or not), sushi vinegar (or vinegar + sugar) eaten with chicken satay.

spicy thai beef salad (grilled steak, cilantro+lime+fishsauce+sugar+jalapeno dressing, cucumbers, onions, tomatoes).

I also fourth the cucumber feta tomato salad.

My standby for lots of cucumbers is cucumber salad -- cucumbers, red onion, sour cream (or mayo)..

Good just to snack on randomly too.
